My journey to health has been a long one… growing up as an athletic kid in California, I was a devout carbetarian. My pediatrician told my parents to allow me to eat whatever I was willing to eat because I was such a picky kid, which meant I lived on cheerios and peanut butter sandwiches until I was 11. Next week the holiday season officially kicks off with Thanksgiving weekend. This is a great opportunity to catch up with family and friends, eat some delicious foods, have a few drinks, and shop till you drop.

For most people, it also marks the start of big, warm, snuggly clothes season, which is convenient, because as the weather gets colder, you have the perfect cover to hide all those pounds you’re about to gain. Fats have been made the enemy in our culture. We are still feeling the residual effects of an entire generation bought into a low fat diet. I want to clear some things up about fat and explain why we needn’t be fearful of it!

There are Three Types of Fat:

  1. Saturated-contains most amount of water possible, and is usually hard at room temperature (butter, lard, coconut oil).

  2. Monounsaturated-lack two hydrogen atoms, therefore less stable, and more likely to go rancid under high temperatures (olive oil, nuts, avocado).

Yes, there is an endless supply of Paleo blogs and recipes, and subsequently, there is likely an abundance of Paleo taco recipes. But, this one I've come across more than once, loved it both times, and didn't realize it was the same recipe until literally about 10 seconds ago. So in spite of the plethora of information on the www, I've gravitated towards this one enough times to share with you. Here's why:

When comparing our generation to the Paleolithic era, there are a lot of obvious differences. One thing we as CrossFitters have be trying to emulate, is the way they ate.The Paleo Diet consists of lean meats, lots of vegetables and fruits, nuts and seeds, some starch, and no sugar. As CrossFitters, we are always looking to find the best ways to train and live, and of course how we fuel our body is a huge part of that.
